Ingredients:
- 500g - Chicken Breast (DICED)
- 1 – Onion
- 1 – Carrot (Optional)
- 1 C – Rice

Sauce:
- 2 D – Jimmy’s Satay Sauce
- 1.5 D - Soya Sauce (light)
- 1.5 D – Plum Sauce
- 1.5 T – Cornflour
- 1 Pinch – Chilli Flakes
- 1 T – Seasame Oil
- 1 T – Curry Powder
- 1 T – Chicken Stock
- 1/4 C – Water
D – Dessert Spoon
T – Tea Spoon
C – Cup |

Method:
- Mix sauce ingredients into a bowl.
- Slice onion in half lengthwise (with the grain) then cut into 1cm strips.
- Slice carrot in thin strips
- Prepare chicken into strips/chunks.
- Cook onions (separate from chicken) lightly until clear in a splash of oil.
- Cook rice in which ever way suits you.
- Cook chicken over high heat in a wok.
- Add onions & sauce.
- Give it a stir whilst rice finishes cooking.
- Serve on top of rice.
