The Ultimate Satay Chicken Recipe Posted on July 28, 2009 by Peter 3 Ingredients: 500g - Chicken Breast (DICED) 1 – Onion 1 – Carrot (Optional) 1 C – Rice Sauce: 2 D – Jimmy’s Satay Sauce 1.5 D - Soya Sauce (light) 1.5 D – Plum Sauce 1.5 T – Cornflour 1 Pinch – Chilli Flakes 1 T – Seasame Oil 1 T – Curry Powder 1 T – Chicken Stock 1/4 C – Water D – Dessert Spoon T – Tea Spoon C – Cup Method: Mix sauce ingredients into a bowl. Slice onion in half lengthwise (with the grain) then cut into 1cm strips. Slice carrot in thin strips Prepare chicken into strips/chunks. Cook onions (separate from chicken) lightly until clear in a splash of oil. Cook rice in which ever way suits you. Cook chicken over high heat in a wok. Add onions & sauce. Give it a stir whilst rice finishes cooking. Serve on top of rice.
